Brimbank highway patrol officers detected the bike travelling 193 km/h in a 100 km/h zone just before 11pm on Saturday night.
The Suzuki GSXR exited the freeway at Kings Road, Taylors Lakes and was clocked at 136 km/h with police hot on his tail.
The Diggers Rest man, 31, was eventually stopped on the Melton Highway.
